What is meant by "the Ring of Adamant"? What's Adamant and how's it come into play?

As you may know Nenya was one of the three elven rings borne by Galadriel. Names for the ring include: Ring of Water and Ring of Adament.
Adament is an old english word for diamond. In this case it is used to descibe Nenya's precious stone within the ring.

They are elves, why couldn't they make a ring totally out of Diamond? That would look very pretty, especially when light shinned through it.

Very hard? Diamond? Mithril was better; probably as hard and more magical. And anyway, it was Ring of Power, not a trinket.
