A couple of my favorites:

Tar-Elendil, that is also one of my favorite quote. Eomer's fury is so awesome at that point.

This is Bilbo's walking-song that Frodo modified to sing during his last days in ME, just before they set sail. It brings me to tears every time I read it.

In the book this is in the chapter "the shadow of the past", but in the movie Gandalf sais it in Moria.
