Denethor is the only one who didn't meet Galadriel - She's Elrond's mother in law (or mother in elf-law) and Gimli met her in Lorien (and he's in love with her).

Bombadil, as he is the only immortal. He is also the only one to appear in only one book of The Lord of the Rings (He's mentioned in THe Hobbit)
