What type of Elvish do they use in the movies? Does anybody know?

This might not be right, but when I was watching the FOTR extended edition VHS with closed captioning on, during the scene on Caradhras (sp?) when Saruman is sending the snow or whatever, says something like this:
Saruman: [Chanting in Quenya]
and
Gandalf: [Chants in Sindarin]

O! So I guess they use both...? lol well I was wondering more along the lines of what Aragorn spoke to Legolas and Arwen.
So I guess my REAL question would be which "tribe" of elves are the grey elves? Are the mirkwood elves the grey elves? noo...I thought they were the Green elves..cause legolas GREENleaf .I'm SO confused.

Aragorn was speaking Sindarin.
The 'tribe' of Elves that are the Grey Elves are the Sindarin. Mirkwood elves are Silvan, or green. Legolas' name has nothing to do with this.

I think Legolas speaks Quenya. That's all i know.

Quenya is 'high-Elven speech' and Sindarin is the more common, day-to-day speech. I'd assume most elves know both.

Yeah so Im guessing Aragorn speaks to Legolas in Sindarin and to arwen in sindarin but when arwen speaks to galadriel or her father for example she would use Quenya.

Elvish. Hmmm... one of my many 'bugbears' about the movie is the flippant way that characters move in and out of languages, and the inconsistencies in providing subtitles. I realise that multilingual people often use more than one language in a conversation, but in the movies this gets pretty distracting. Why would Arwen and Elrond not talk to each other in Elvish the WHOLE TIME? And why do we get subtitles in some cases (Aragorn/Arwen) but not in others (Gandalf spouting Rohirric at King Theoden)?? It just bugs me...
