Well, off the top of my head there were Quenya and Sinarin, both Elvish languages. There was Westron, Hobbitish, the language of the Rohirrim, Khuzdul from the Dwarves, and the Black Speech. The Ents spoke a type of run-on Elvish.

The Elvish langauges are the most developed of the list.
