The Silmarillion describes Sauron's 'werewolves' of the Second Age as "fell beasts inhabited by dreadful spirits that he had imprisoned in their bodies." This would seem to suggest that the wolves were indeed some kind of undead creatures whose bodies disintegrated or disappeared after they were "killed".
As a side note, even supposedly ordinary items of Elvish make always seem to have at least a hint of "enchantment" (for lack of a better word) wound about them. Consider the cloaks given to the company in Lorien, the lembas, and the rope given to Sam, which untied from a tree at a tug and caused Gollum great pain when he was bound with it.
