Oh rot...I can see that I asked the question poorly. I should have asked who built the Carrock and
why did he call it the Carrock. My bad.
The answer I was looking for was Gandalf's answer to Bilbo's question:

Beorn is, of course, the one who built it and is the one of whom Gandalf is speaking in the above quote.
So...since Beorn is the only part of my question that one could possibly get right, I will say that wilwarin538 is correct because (s)he posted first.
