I read somewhere that he designed the gardens of Ithilien for Faramir.
He hired Gimli to do the manual labour, and the pair were so successful that they teamed up with Treebeard to set up a chain of garden centres named Elven Plant Heaven (Legolas threw a strop and insisted on being the only recognised owner/founder).

(Please don't believe anything I say... [img]smilies/smile.gif[/img] except for the fact that he actually did design the gardens. Which I'm not even sure is correct...)
