Seven is the number of completeness, the "perfect" number in the Christian doctrine. Nearly all of the numbers Tolkien chose, especially for the ring poem, had some significance, IMO. I had never thought of Snow White's dwarves, but I am sure that Tolkien did not mean for them to be associated with his own. He seemed to dislike the way fairy tales portrayed elves and other magical creatures as childish, so I doubt he would like one to get the idea that his dwarves resembled those from Grimm's story.
