For men, I'd say Aragorn. Turin, Tuor, Beren, etc... were all great, but Aragorn was Aragorn, kind of the most human, and least elven qualities.
For Dwarves I say Dain-he withstood the fear of the shadow of the Balrog, killed Azog, etc.
For hobbits, of course the Bullroarer Took.
