Ungoliant as a Maia is a free interpretation not based on concrete text. As for Nimrodel=Goldberry, I suggest a quick look into The Adventures of Tom Bombadil. I have yet to see an Elf that lives at the bottom of a river with her mother. That rebukes it furthr, apart from the valid reason burrahobbit already provided.
