Oh rot...I can see that I asked the question poorly. I should have asked who built the Carrock and why did he call it the Carrock. My bad.
The answer I was looking for was Gandalf's answer to Bilbo's question:

He called it the Carrock, because carrock is his word for it. He calls things like that carrocks, and this one is the Carrock because it is the only one near his home, and he knows it well.

Beorn is, of course, the one who built it and is the one of whom Gandalf is speaking in the above quote.

So...since Beorn is the only part of my question that one could possibly get right, I will say that wilwarin538 is correct because (s)he posted first.
