Ooohhh.... That's a hard one.
Why don't I just say the highlights of each one : )) FotR: Everything TTT: Helm's Deep RotK: Mostly Everything especially the scene from the Black Gates towards the end and the Ghosts Can't imagine a world without the Extended Editions
