Great topic idea!
I'll just post some as they come to my mind.

How the éored of Éomer defeats the Isengarders under Uglśk is the classical rider-charge and circumvention as old as Cannae and mainly the Gothic riders who were able to surprise the Romans often with this this manouevre.

The use of the Mūmakil of Harad on the Pelennor is at once both like the use of war elefants in history and like one use of tanks in WWII warfare, the armoured spearhead assault.
