I find most fantasy writing to be very poorly written but once I get the book in my hands I enjoy it anyway.
Anyway, I really enjoyed the Belgariad and the Malloreon by David Eddings. They are long (five books each) and not exactly what I'd call "deep" but fun for a little "shallow" pleasure. I also like Terry Brookes. The Shannara books are ok but "steal" too much from Tolkien (even more than most fantasy). I think Brooke's best writings are his Landover books, despite their ridiculousness.
