That's a very good question. They certainly wouldn't need to take on a body to do their thing, but aside from that I don't have any concrete answers. I would imagine the fighting to be in some sort of European style, but aside from that I couldn't say. That first battle was before the Elves were around, so we really don't know much about it. Similarly, you could ask how the Ents moved that river. We know that they did, but I don't quite know how. Tulkas et al fought Morgoth, but I don't quite know how. I have absolutely know idea how two wizards would actually fight. Maybe with swords. Like how Ben Kenobi and Darth Vader fight on the Death Star, all slow and talky.
