Anyways, I really am wondering how they loaded giant chunks of the city's rubble onto the Trebuchets

Maybe it's not really stone, but some kind of lightweight substitute, like Paper Mache?
OKay, maybe not paper mache, but how about Styrofoam?

I've only watched some of TTT EE behind the scenes beyond where the actors stop being on it, but isn't the something on there about how they did the sound effects?

I believe you are correct Lammoth. It is said that the architects did not plan the building of the city well, and they even ran out of Wattle & Daub by the 5th tier of Minas Tirith. They therefore had to continue building their glorious city using parts of the lower levels that weren't in camera shot, whatever a "camera shot" is...
