All of the above makes sense. Just as some Ents would become more "treeish", and revert to a more vegetative state, maybe Shelob through the years had regressed to a more animal-like creature, obsessed solely with her appetites.

She could have understood any of the languages mentioned above, and just not cared to communicate in those ways anymore. Gollum's "worship" of her obviously meant nothing to her, except as another source of food.

So maybe Shelob was not only evil and malevolent, but in a sense, "insane" as well.
