To answer the original query on this Topic, Tolkien DID write some more about Sam in the Epilouge to LOTR, but was prompted to remove this last part of the book before publication, so he decided to end on "Well, I'm Back,".

It's included in Sauron Defeated, one of the Histories books that Christopher Tolkien editied. It's good. Take a look if you can. I have got the text on my PC, but I'm unsure whether you can post whole sections of books!
