Imladris has just left Hobbiton.
Tolkien

Unfair question!!! This is so unfair because there are so many great quotes from both book and movie!!! Of course, I don't really remember the books so well because I haven't read them in a while, but here are the movies:

Quote:
Legolas: Forgive me, Aragorn. I was wrong to despair. You have led us this far and have not led us astray. Aragorn: There is nothing to forgive.
Pippin: Maybe Treebeard is right. Maybe we should go home. Merry: But the fires of Isengard will spread...something, something, something.

Everything with Gollum

Quote:
... stretched, like butter scraped over too much bread.
Quote:
I made a promise, Mr. Frodo: "Don't you leave him Samwise Gamgee" and I don't mean to...I don't mean to.
Quote:
I would have followed you my brother, my captian, my king.
And there are many more.

Books:

When Pippin is talking with Frodo, Sam, etc after the counsil of Elrond and he says that instead of throwing Sam into chains, instead he goes and rewards him for his cheek!

That's really the only one I can remember but there are so many others. Yes, I know I am repeating myself.
