What do you mean by "following Melkor"?
The Maiar mentioned are Ilmare, Eonwe, Osse, Uinen, Melian, Olorin (Gandalf/Mithrandir), Sauron (Gorthaur the Cruel), Arien, Tilion, Curunir, Radagast, "and others of the Istari who went into the east of Middle-earth, and do not come into these tales."
There they are, in order. 13, if you count the indirectly named Alatar and Pallando.
Also, you might've wanted "the Valaraukar, the scourges of fire that in Middle-earth were called the Balrogs, demons of terror" included.

Well, for one Sauron, and also the Valaraukar. It is mentioned that Ossë followed Melkor for a time, but repented and served Ulmo once more.

Correct. The key word is following, ie continuing to serve and not followed, served for a period of time.
Ungoliant did serve Melkor once but had disowned him to be her own mistress. It could be argued that Thuringwethil may be included as it specifically mentions that she was 'wont to fly in vampires form', indicating that she took the form of a vampire bat voluntarily.

Just a note. I don't think that it was Mahtan who taught Feanor how to make weapons. On the contrary, the Silmarillion states that "bitterly did Mahtan rue the day when he taught to the husband of Nerdanel all the lore of metalwork", which suggests that he was very unhappy about the weapons. Rather, it was Melkor who first spoke to the Elves (and Feanor) concerning weapons.
