It was just lucky guessing! :D
But if you want to know how exactly I arrived at this one:
I supposed that the second word was probably "are" and the third "the". From there I concluded that the first word might be "these" or "those". I tried several letters starting -tr-----t, and it seemed most likely to me that it was "str---- , and the t at the end led me to think of a superlative. So, "strongest", or "strangest" came to my mind. And, because it's Tolkien, it was probable that /tr---/ would be "trees". The next one, "that" was only logical, and, if the one letter word was "I", as I supposed, "ever I saw" just popped up before my eyes.
As this was revealing enough, I could look up the second part of the sentence in the book.
Well, here's another one for you to solve:
---/ ----/ --/ ---/ -----/ ---/ -----/ ----/ ---/ -----/ -----/ --/ ------/ ----/ ---/ -----/ --/ ---/ ---/, ---/ -----/ ------/ --/ -------/ ---/ ------/ ----/ ------/ --/ --------/.

"works" is correct! :) Strange, how different people keep different quotes in their memory...
Galadriel says those words to Frodo in "The mirror of Galadriel" when he asks her what she would wish for.
"That what should be, shall be. The love of the elves for their land and their works is deeper than the deeps of the sea, and their regret is undying and cannot ever wholly be assuaged. Yet they will cast all away rather than submit to Sauron; for they know him now. " right after this speech, Frodo offers her the ring.
